Food processing, any of a variety of operations by which raw foodstuffs are made suitable for consumption, cooking, or storage. A brief treatment of food processing follows. For fuller treatment of storage methods, see food preservation.

Food processing generally includes the basic preparation of foods, the alteration of a food product into another form (as in making preserves from fruit), and preservation and packaging techniques.

Importance of Food Processing

All the raw food materials are processed to improve their palatability, nutritional value and shelf-life.

1) Preservation for later consumption or sale to fetch better price

2) Removal of inedible portions

3) Destruction or removal of harmful substances

4) Conversion to forms desired by the consumer and

5) Subdivision into food ingredients.

India is the world's second largest producer of food next to China, and has the potential of being the biggest with the food and agricultural sector. The total food production in India is likely to double in the next ten years and there is an opportunity for large investments in food and food processing technologies, skills and equipment, especially in areas of Canning, Dairy and Food Processing, Packaging, Frozen Food/Refrigeration and Thermo-Processing.

Market Outlook

India’s food processing sector ranks fifth in the world in exports, production and consumption.

India produces nearly 16% of the world’s total food grain production. It is one of the largest producers of agricultural produce. With a population expected to reach to about 590 million people by 2030 in urban India, India has a huge potential domestic demand for processed foods other than the demand from the exports. There are many socio-economic factors that are driving the demand side of the Indian Food Processing Industry. The changing consumption patterns, both in tier 1 and tier 2 cities, rising income levels among the middle-class and changing lifestyles, are some of the factors providing the demand side push for the Food Processing Industry.

India Food Processing Industry is estimated at $135 billion industry which is growing at about 8% annually. This growth rate is significantly more than agricultural growth rate which remains around 4%.

The Indian food industry is poised for huge growth, increasing its contribution to world food trade every year. In India, the food sector has emerged as a high-growth and high-profit sector due to its immense potential for value addition, particularly within the food processing industry. The food industry, which is currently valued at US$ 39.71 billion is expected to grow at a Compounded Annual Growth Rate (CAGR) of 11 per cent to US$ 65.4 billion by 2018. Food and grocery account for around 31 per cent of India’s consumption basket. The Food Processing Industry accounts for almost 32 per cent of the total food market in India.

The organised food business in India is currently worth US$ 48 billion, of which food delivery is valued at US$ 15 billion.

The online food delivery industry grew at 150 per cent year-on-year with an estimated Gross Merchandise Value (GMV) of US$ 300 million in 2016.

Demand for processed food rising with growing disposable income, urbanisation, young population and nuclear families.

During FY11–15, India's exports of processed food and related products (inclusive of animal products) increased at a CAGR of 23.3 per cent to USD21.5 billion. In FY16*, India’s exports stood at USD6.43 billion.
