Milk & Dairy Processing Business Ideas

Milk & Dairy Processing Business Ideas. Production of Ghee, Khoa (Khoya), Dairy Cream, Toned Milk 3% Fat, Thandai and Shrikhand. Milk Packaging and Distribution Milk is a valuable nutritious food that has a short shelf-life and requires careful handling. Milk is highly perishable because it is an excellent medium for the growth of microorganisms – particularly bacterial pathogens – that can cause spoilage and diseases in consumers. Milk processing allows the preservation of milk for days, weeks or months and helps to reduce food-borne illness. India is one of the world's largest producer and consumer of milk. It contributes to almost 9.5%of the global milk production. Processing of dairy products gives small-scale dairy producers higher cash incomes than selling raw milk and offers better opportunities to reach regional and urban markets. Milk processing can also help to deal with seasonal fluctuations in milk supply. The transformation of raw milk into processed milk and products can benefit entire communities by generating off-farm jobs in milk collection, transportation, processing and marketing. Ghee Ghee is a form of highly-clarified butter that is traditionally used in Asian cooking. Like butter, ghee is typically made from cow's milk. Ghee is made by melting regular butter. The butter separates into liquid fats and milk solids. Once separated, the milk solids are removed, which means that ghee has less lactose than butter. Traditionally, ghee has been used as cooking oil, an ingredient in dishes, and in Ayurveda therapies. Ghee is still used in Ayurvedic massage and as a base for herbal ointments to treat burns and rashes. Ghee is great for deep or pan frying. It can be used when toasting spices, as opposed to dry roasting, when making authentic Indian dishes. This technique results in a richer version of the spice's original flavor. Ghee can be thought of simply as a more durable, more flavorful butter replacement, and can be used as a condiment you spread on toast or toss with vegetables. A more traditional variation of ghee worth trying is flavored ghee, made by adding ginger, peppercorns, cumin, or other spices at the very beginning of the clarifying process. Khoa A concentration of milk to one-fifth volume is normal in the production of khoa. Khoa is used as the base for a wide variety of Indian sweets. About 600,000 metric tons are produced annually in India. Khoa is made from both cow and water buffalo milk. Khoa is made by simmering full-fat milk in a large, shallow iron pan for several hours over a medium fire. The gradual evaporation of its water content leaves only the milk solids. The ideal temperature to avoid scorching is about 80°C (180°F). Another quick way of making khoa is to add full fat milk powder to skimmed milk and mixing and heating until it becomes thick. Cream Cream is a dairy product composed of the higher-butterfat layer skimmed from the top of milk before homogenization. The dairy cream market is driven by the growing food processing industry and increasing household consumption. The other major factors driving the market demand are changing food preferences towards processed food, and the growing population and rapid urbanization. The high production costs and health consciousness leading to low-fat consumption are found to be obstacles for the industry. Toned Milk Toned milk is a method, developed in India, of treating buffalo milkby adding skim milk, powdered skim milk and water to buffalo milk. This process decreases the fat content, increases the quantity of available milk, and 'tones up' the non-fat solids level to the original amount. Thandai Thandai is a refreshing milk based beverage specifically associated with the Holi festival. During dry summer winds, Thandai makes you feel cooler and have many other health benefits as well. Shrikhand Shrikhand is a popular, classic, thick and delectable Indian yoghurt sweet commonly known all over India especially in the states of Gujarat and Maharashtra. It is one of the prime sweet delicacies from the Gujarati and Maharashtrian cuisines made with hung & strained yoghurt flavoured with saffron and cardamom. Shrikhand is one such excellent and luscious Indian sweet served during festivals, feast or get together. Market Outlook The milk processing industry in India will rise at an overall compound annual growth rate (CAGR) of 20.5%, and will be worth USD 53.17 billion by 2020. India has always been the largest producer (an estimated 400 million litre per day currently) and consumer of milk in the world. But it remained a boring market largely because the per capita consumption was low, and most of the milk was consumed in its basic, liquid form, or at best as ghee and some butter. Out of the 400 million litres of milk that India produces per day, 160 million litres per day (48 per cent) is retained by the producers for their own consumption. The surplus milk that is available for sale is around 240 million litres per day. Along with offering profitable business opportunities, the dairy industry in India serves as a tool of socio-economic development. On the other hand, the private participation in the Indian dairy sector has also increased over the past few years. Both national and international players are entering the dairy industry, attracted by the size and potential of the Indian market. The focus is being given to value-added products such as cheese, yogurt, probiotic drinks, etc. They are also introducing innovative products keeping in mind the specific requirements of the Indian consumers. The factors which have contributed to this growth are increasing population, rising disposable incomes, health consciousness among the consumers, government initiatives, etc. Some of the major factors driving the growth of the Indian dairy market are rising working-population, increasing disposable incomes and health consciousness among the consumers. Additionally, the government is also taking active participation in advancing and promoting dairy farming practices to promote the production and quality of milk. Milk production is a very important element of the whole dairy chain. Over the next five years, changing lifestyles of urban population and rising demand for healthy and convenient dairy products is anticipated to play an instrumental role in the growth of India dairy products market. In addition, value-added dairy products have larger shelf life than raw milk. Value-added products help your company become more viable, more visible to the public and open up new markets. The global dairy market was USD 413.8 billion in 2017, and is expected to register a decent growth rate during the forecast period. The global dairy sale has surpassed 192,884 million kg in 2017, with milk accounting for the largest category. The global dairy market observed a volume growth of 1.8% during the past five years. Increasing population, rising demand for dairy products from developing countries and improvements in operational efficiency are some of the key factors favoring the market growth. In addition, emerging economies due to changing consumer dietary patterns will offer significant growth opportunities. However, increasing shares of value-added products (VADPs) in overall dairy products is restricting the market growth. Ghee Ghee, which is widely used in Indian cooking, is the pure butter fat left over after the milk solids and water are removed from butter. It is very fragrant with a rich nutty taste and represents the second largest consumed dairy product in India, after liquid milk. The ghee market in India has witnessed a strong growth in recent years. Some of the factors which have contributed in influencing the market growth are increasing disposable incomes, expanding distribution channels and introduction of organic ghee. The taste, texture, and color of the ghee depend on the quality of butter, source of milk, and duration of boiling. In Ayurveda, ghee is considered as a vital medicine for healing wounds, improving digestion, reducing free radicals, and boosting immune system. It can be kept at room temperature for several weeks without refrigeration. The consumption of ghee has increased, as it is rich in fat soluble vitamins A, D, & E, helps in building strong bones, improves digestion, and reduces inflammation. The plethora of health benefits and high penetration in the emerging market are the key drivers of the market growth. Further, high disposable income and population boom are expected to present lucrative opportunities to market players. However, overconsumption of ghee could lead to cardiovascular diseases, which in turn is key factor affecting the market growth during the forecast period. The healthy growth of the market can be attributed to numerous forces. Population growth, rising disposable incomes, easy availability, and growing awareness about the benefits of ghee are some of the factors that are broadening the growth aspects of the market. The global ghee market is segmented based on application and geography. On the basis of application, it is divided into household and industrial. Geographically, it is analyzed across North America, Europe, Asia-Pacific, and LAMEA. In 2017, the global Ghee market size was million US$ and is forecast to million US in 2025, growing at a CAGR of from 2018. Dairy Cream The global dairy cream market is expected to reach USD XX billion by 2023, growing at a 3.6% CAGR during the forecast period 2018-2023. Germany, Russia, Canada, and France were the leading dairy cream consuming markets, together accounting for approximately more than 40% of global consumption. These countries were also the leading producers of fresh cream in the world. Based on the cream type, the market is segmented into dairy cream and vegetable cream. The dairy cream market is further segmented into fresh cream, whipping cream, half and half cream, sour cream, double cream, and others. Fresh cream is leading in the dairy cream market for food service industry. It is appropriate for spooning and is broadly utilized as a part of cookery, progressively well known in Britain. The vegetable cream is further segmented into soybean, coconut, palm kernel, and others. The soybean cream is the leading segment in the vegetable cream market for food service industry. Innovative product development with low trans-fat and organic cream products are expected to be further growth opportunities in this industry. Toned Milk 3% Fat Toned milk is often used in areas where milk production is extremely low. In these cases, untreated milk tends to be high in fat, and mechanical removal of the milk-fat would be cost-prohibitive. Buffalo milk has a fat content of about 7-8%, and contains calcium and a non-fat solids content of 9-10%. By reducing the fat content to 3% through the toning process, the available milk quantity is nearly tripled. Toned milk contains lesser fat as compared to full cream milk. Nevertheless, it continues to maintain the nutritional content. If we take the fat content into consideration, one glass of toned milk contains 80 calories, which is half of the calorie content of full-cream milk. It is a rich source of calcium and is good for your bones and teeth. Double-toned milk: It is obtained by taking milk through the toning process twice, reducing the fat content of milk even further. Double-toned milk is ideal for weight conscious, calorie counting people. Double-toned milk is more nutritious than toned milk. Milk Packaging Market Packaging of milk is the process of using suitable vessels to carry, protect and merchandise milk. Condensed milk, fresh milk, skimmed milk, evaporated milk and flavored milk are packaged in a broad range of packaging types such as cans, bottles, pouches, etc. Milk packaging has transformed from the conventional methods to new and advanced techniques. Depending on the convenience of consumers, milk packaging is done through several types of specialized containers such as tetra packs. Earlier, glass bottles were widely used for milk packaging, although, currently, only a minor proportion of glass bottles are being utilized in milk packaging. Thermoformed plastic packaging products such as bottles and pouches are being widely used for milk packaging owing to their high stability, resistance to UV rays and resistance to a broad range of temperatures. Also, cartons prepared from plastic or wax coated paperboard are being most widely used for milk packaging. Global Milk Packaging Market was valued at $36,157 million in 2016, and is expected to reach at $49,809 million by 2023, registering a CAGR of 4.6% from 2017 to 2023. Packaging is a method of using components and containers to carry, protect, identify, and enable merchandising of products. Apart from providing safety and hygiene of products, it enables differentiation of products of two distinct companies or competitors. Moreover, increase in demand for single serve milk packs is estimated to fuel the growth of the global milk packaging market during the forecast period. In addition, several health & nutritional benefits associated with the use of packaging materials have fueled the demand for milk in the recent years, which is expected to drive the global market during the forecast period. The packaging of milk is an important aspect to protect, carry, and market in order to sustain its freshness and convenient form of the product. There are various packaging types which are used for packaging milk, such as bottles, cans, and pouches. The trends associated with the packaging types vary with respect to country and region. For example, in Germany, the milk is usually packed in cartons whereas in the US the milk is also packed in pouches. There are diverse reasons for good packaging of milk like safety, information, ease of storage & handling, and distribution damages. The rise in production of milk across the globe is expected to have a positive impact on the market growth over the forecast period. Furthermore, the correct choice of packaging material in accordance with the weather conditions helps in ascending shelf life of the product which is likely to boost the utilization. Growth of the global milk packaging market is driven by factors such as increasing number of small households – due to which consumers prefer single serve packs of consumer goods – particularly for milk and other dairy products. Moreover, increasing number of health conscious consumers in various countries is driving demand for milk as a source of calcium, minerals, vitamin D, and protein. Availability of various flavoured milk products in the market is another factor expected to stimulate growth of the global milk packaging market during the forecast period. In addition, increasing population and per capita disposable income is expected to drive sales of packaged milk products in future. Moreover, various applications of milk for preparing food products is a factor expected to drive growth of the milk packaging market during the forecast period. Cheese Analogues Production

Cheese Analogues Production. Analogue Cheese Manufacturing Business. Commercial Cheese Processing Project Cheese analogues are usually defined as products made by blending individual constituents, including non-dairy fats or proteins, to produce a cheese-like product to meet specific requirements. They are being used increasingly due to their cost-effectiveness, attributable to the simplicity of their manufacture and the replacement of selected milk ingredients by cheaper vegetable products. Cheese analogue cost less to make than real cheese. By carefully choosing the ingredients in the analogue, other characteristics such as the melting temperature and the taste can be changed. Flavor enhancers can be added to make the product taste similar to Parmesan, feta or Camembert cheese, for example. Food coloring is used to match the color of a cheese product. Development of cheese analogues involves the use of fat and/or protein sources other than those native to milk, together with a flavor system simulating as closely as possible that of the natural product. It is also necessary to develop a suitable processing regime capable of combining these elements to provide the required textural and functional properties. Cheese analogues (more widely known as cheese alternatives) are products used as culinary replacements for cheese, but have properties such as different melting points or lower costs that make them attractive to businesses. Cheese analogues are the products made out of dairy, partial dairy or non-dairy ingredients, which tend to resemble the particular standardized cheese variety in question. The growing gap between the demand and production of cheese and the customer's preference for a 'tailor-made' convenience product has necessitated production of cheese analogues. Cheese analogues (more widely known as cheese alternatives) are products used as culinary replacements for cheese. These include vegan cheeses as well as some dairy products, such as processed cheese or Kraft Singles that do not qualify as true cheeses. These foods may be intended as replacements for cheese, as with vegan products, or as imitations, as in the case of products used for salad bars and pizza-making, which are generally intended to be mistaken for real cheese, but have properties such as different melting points or lower costs that make them attractive to businesses. Market Outlook In 2017, the global Analog Cheese market size was million US$ and is forecast to million US in 2025, growing at a CAGR of from 2018. Casein from Milk

Casein pronounced "kay-seen" in British English, is a family of related phosphoproteins (?S1, ?S2, ?, ?). These proteins are commonly found in mammalian milk, comprising c. 80% of the proteins in cow's milk and between 20% and 45% of the proteins in human milk. The Casein has a wide variety of uses, from being a major component of cheese, to use as a food additive. The most common form of casein is sodium caseinate. Casein is one of the two types of proteins in milk. It carries the same amino acid profile as whey but is absorbed differently. This means it offers a full array of amino acids to help your muscles achieve protein synthesis rather than protein breakdown. Maximuscle Micellar Casein, for example, is created from fresh skimmed milk to reduce lactose and fat but offer a full profile of slow release proteins. Casein is the protein found in all mammals’ milk. Mammals include cow, goat, sheep, yak, buffalo, camel and humans. This includes human breast milk even if the mother is on a GFCFSF diet. The global casein and caseinate market is anticipated to expand at a steady pace in the upcoming years. Casein is a type of protein which akin to other proteins helps build and repair tissues. Dairy Whitener, Milk Powder Manufacturing Business

Dairy Whitener, Milk Powder Manufacturing Business. Production of Skimmed Milk Powder (SMP), Whole Milk Powder (WMP) and Dairy Whitener. Investment Opportunities in Milk Processing Sector Powdered milk is a dairy product produced from cow milk. Skimmed milk powder is deficient in fat and fat soluble vitamins but the proteins, water-soluble vitamins and minerals are preserved. There are mainly two types of milk powders. Skimmed Milk Powder and Full cream milk powder. Skimmed Milk Powder has 1.5% Fat and FCMP has 26% Fat. If you are calorie conscious, you should take Skimmed Milk Powder. People use FCMP for making curds etc. Dairy Whitener is mainly used for making Tea and Coffee. They have various variations in Fat. But like Nestle, Britannia or Maul will make dairy whitener with 19% Fat and 19% Sugar. DW is per-sweetened. ? Skim Milk Powder (SMP) is the product resulting from the partial removal of fat and water from pasteurized milk. ? Whole Milk Powder (WMP) is the product resulting from the partial removal of water from pasteurized milk. ? Dairy whitener is made by removing the liquid from the cow milk and it also contains around 20% added sugars. Powdered milk is made by the evaporating milk to dryness. Milk powder is one of the durable dairy products and doesn't needs refrigeration. Dairy products are highly perishable. Converting milk into milk powder increases its shelf life and enables it to be stored for extended period (about 1 year) without substantial loss of quality, even at ambient temperatures. The dairy?based powders are not only used for recombination or reconstitution, but they can be exploited for their intrinsic functional properties for application as a food ingredient in several “value?added foods” such as confectionery, bakery, and meat products. Knowledge and a basic understanding of the functional properties of milk powder wise enable food processors to prepare “tailor?made” value?added milk?based powders. Powdered ingredients are stable and convenient for storage, and since the consumer never sees the food assembly process, any prejudices concerning the lower quality associated with dried ingredients is removed. Foods prepared from powdered ingredients are usually considered to be of lower quality (and therefore lower value) than fresh or frozen ingredients and products. In recent days there is great emphasis on adding value to powders, and therefore, an inclusive effort from dairy plant and powder processors, ingredient people, marketing experts is requisite to identify the means to add more value. Uses ? Dairy whitener is generally used in making tea and coffee and has different variations of fat. Make use of milk powder for making cakes, chocolates etc. ? Whiteners are not apt for making chocolates or any other thing. Also, you need milk for making condensed milk; you won't be able to make it with milk powder or whitener. ? Provides baked flavor during baking and heating. Provides creamy dairy notes. ? Prevents fat globules from forming lumps. Improves product appearance. ? Improves mouth feel, helps provide the creamy, smooth texture of fat important for low?fat products. ? Some milk powders disperse well in food systems. Prevents sedimentation in beverages, soups, and sauces. ? Provides fat?like attributes in products. Allows a reduction in fat content. Improves product texture. ? Maintains foam properties which enhance visual appeal as well as taste and texture. Market Outlook Global milk production is projected to increase about 1.9% during the next 10 years compared to 2.1% annual growth experienced in the past decade. Global milk production is projected to increase by 153 million tons, of which 73% is expected to come from developing countries, The Indian skimmed milk powder (SMP) market grew at a CAGR of nearly 10% during 2011-2018. India's Demand for Dairy Products Increasing In India, the world’s largest milk producer, there are around 70 million small-scale producers. India is expected to produce 175 billion litres of milk this year, which is nearly twice what the US – the 2nd biggest milk producing nation – is expected to produce. India has been the leading producer and consumer of dairy products worldwide since 1998 with a sustained growth in the availability of milk and milk products. Dairy activities form an essential part of the rural Indian economy, serving as an important source of employment and income. India also has the largest bovine population in the world. However, the milk production per animal is significantly low as compared to the other major dairy producers. India exported 94,000 tonnes of dairy products in 2018, valued at nearly US$290 million. Butter and other dairy fats (including ghee) make up the majority of exports, accounting for 65% in volume terms. The dairy sector has become among the highest gross value sectors in agriculture with higher prices and correspondingly higher value of milk production. With the globalization of the dairy industry, there has been a paradigm shift of international dairy markets from being supply driven to demand driven. This deficit has increased the demand for exports of Indian dairy products. Over the next five years, changing lifestyles of urban population and rising demand for healthy and convenient dairy products is anticipated to play an instrumental role in the growth of India dairy products market. Dairy Farming & Dairy Products (Milk, Butter, Ghee & Paneer)

Dairy farming has been part of agriculture for thousands of years, but historically, it was usually done on a small scale on mixed farms. Specialist scale dairy farming is only viable where either a large amount of milk is required for production of more durable dairy products such as cheese, or there is a substantial market of people with cash to buy milk, but no cows of their own. Centralized dairy farming as we understand it primarily developed around villages and cities, where residents were unable to have cows of their own due to lack of grazing land. Near the town, farmers could make some extra money on the side by having additional animals and selling the milk in town. Dairy farming is a class of agriculture for long-term production of milk, which is processed for eventual sale of a dairy product. Dairying is an important source of subsidiary income to small/marginal farmers and agricultural laborers. India derives nearly 33% of the gross Domestic population from agriculture and has 66% of economically active population, engaged in agriculture. The share of livestock product is estimated at 21% of total agriculture sector. Milk production alone involves more than 70 million producers, each raising one or two cows/buffaloes primarily for milk production. In addition to milk, the manure from animals provides a good source of organic matter for improving soil fertility and crop yields. The gobar gas from the dung is used as fuel for domestic purposes as also for running engines for drawing water from well.In Hinduism; cow urine has a special significance as a drink. Sprinkling of cow urine is said to have a spiritual cleansing effect as well. Gomutra is not a toxic waste material. 95% of it is water, 2.5% consists of urea, and the remaining 2.5% is a mixture of minerals, salts, hormones and enzymes. As of 2018, India is the leading milk producing country in the world, accounting for ~19% of the global market share. The milk processing industry in India is expected to expand at a compound annual growth rate (CAGR) of ~14.8% between FY 2018 and FY 2023, and will reach INR 2,458.7 Bn in FY 2023. Being one of the primary dairy consumables in India, the increase demand for milk in the country is owed to the increasing population. As of FY 2018, ~81.1% of the Indian dairy and milk processing market was part of the unorganized sector, which produces milk in unhygienic environments. This reduces the overall quality and nutrition levels of the milk produced. India has the highest livestock population in the world with 50% of the buffaloes and 20% of the world’s cattle population, most of which are milch cows and milch buffaloes. India’s dairy industry is considered as one of the most successful development programs in the post-Independence period. India is the world’s largest milk producer, accounting for more than 13% of world’s total milk production. As it is the world’s largest consumer of dairy products, but consuming almost 100% of its own milk production. Dairy products are a major source of cheap and nutritious food to millions of people in India and the only acceptable source of animal protein for large vegetarian segment of Indian population, particularly among the landless, small and marginal farmers and women. In India, about three-fourth of the population live in rural areas and about 38% of them are poor. A specific Indian phenomenon is the unorganized sector of milkmen, vendors who collect the milk from local producers and sell the milk in both, urban and rural areas, which handles around 65-70% of the national milk production. However, it opens a new gate for the dairy farmer to directly reach to the consumer or to shorten the distance between the consumer and producer, leading to higher rates for the product milk. While, in the organized dairy industry, the cooperative milk processors have a 60% market share. The cooperative dairies process 90% of the collected milk as liquid milk whereas the private dairies process and sell only 20% of the milk collected as liquid milk and 80% for other dairy products with a focus on value-added products. In the present situation of world market, the milk and dairy market landscape is a dynamic entity within the food industry new opportunities in emerging markets, increasing globalization, changes in consumer demand, nutritional policy and the regulatory environment are among top issues facing the industry. This will lead to increase of India`s share in the world milk production from the current 16 per cent to 21 per cent in 2020. The core of the dairy industry lies with the milk producing farmer, who gets affected by many factors ranging from fuel and agricultural input prices to government`s foreign policy. The global dairy products market is expected to grow at a CAGR of 5.2% from 2019 to reach $645.8 billion by 2025. Dairy is defined as a business enterprise that deals with the processing and harvesting of animal milk for human consumption. Some of the common milch animals include cow, goat, buffalo, camel and sheep. The milk obtained from these animals can be consumed directly and processed into ice cream, cheese, paneer, butter, ghee, condensed milk and yogurt. These products offer various nutrients such as calcium, proteins, zinc, magnesium, and vitamin D and B12. With widespread demand for dairy products and their proactive function in the global food industry, dairy plays a crucial role in the growth of the economies worldwide. Over the years, the dairy industry has witnessed improvements in product safety through specialization, modernization and consolidation. Milk is readily available as a raw product from a range of dairy farms, and it is treated to boost the variety of nutrients. Heat treatments, pasteurisation, homogenization, and other milk processing operations are performed or handled by milk processing plants, which include a variety of milk processing equipment. Cows produce A1 milk and A2 milk, which are two different types of milk. A2, commonly known as desi cow milk, enhances overall health and nutritional value by removing digestive discomfort. According to studies, desi cow milk is healthier than A1 milk. A2 milk is a natural, antibiotic-free alternative to industrial milk, which contains stress hormones and antibiotics. Similarly, desi cow milk is wholesome and chemical-free. Cow milk derived from Desi cows with a hump on their back is known as A2 milk. Furthermore, desi cow milk has A2 beta protein, which makes it healthier and more nutritious than conventional cow milk, which contains A1 protein. Drinking desi cow milk helps to keep your bones healthy. However, due to its high calcium and other essential minerals content, desi cow milk aids in the development of strong bones. Furthermore, proteins are available, making them an important part of the diet and ensuring the health of bones and teeth. Drinking milk strengthens bones as the density of bone mineral grows with age. The global A2 milk market was worth $1,129.7 million in 2019 and is expected to grow to $3,699.2 million by 2027, with a CAGR of 15.8% from 2021 to 2027. The liquid A2 milk segment held the largest proportion of the market in 2019. A2 milk is a type of cow's milk that includes mostly A2 beta casein protein and is free of A1 beta casein protein. It comes from cows of specific breeds such as guernsey, jersey, Holstein, brown swiss, and others. The key factor of driving market expansion is increasing consumer health awareness, which leads to greater consumption of A2 milk, as well as growing the range of A2 milk products, which will drive demand for the global A2 milk market.
