The seed coat consist of the testa, the hyaline layer which comprises about 2% of the grain. The aleurone layer representing about 6.5% of the grain wheat show a wide range of analytical data which is not unexpected in view of the many varieties which are grown and the very different conditions under which they are cultivated.
